Yes, you can use as many FBOs as you like. When you create an FBO with a GL.GenFramebuffers call, you get a handle for each FBO that you create, and then you set which one is your render target by calling GL.BindFramebuffer with the handle of the FBO you want to render to, or zero if you want to render t the game window.
